Weights & Measures

In Nathan Myhrvold’s Modernist Cuisine cookbooks (which we will certainly delve into on this website) he discusses the absolute necessity of using weights of food instead of measures (such as tablespoons and teaspoons and cups).  And… it’s so obviously the right thing to do I imagine that in 20 years all cookbooks will be using weights.  Tsps, cups, cans, etc, are so imprecise.  Who the hell would use them? You have to get yourself a scale.  Having said all this, it’s obvious to anyone looking at cookbooks in the year 2013 that 99% of them are using measures, either metric or standard.  So it’s not like we’ll be changing any times soon, but damn we SHOULD.  Rant over.
